 create a variety of foods and to make meats and other ingredients more dig
 estible. In this class\, you’ll learn how koji can be made with local gr
 ains and used to ferment a wide range of whole foods. It’s also one of t
 he key ways to develop rich umami flavor in many dishes while adding depth
 \, nutrients\, and complexity. Recipes and examples will be provided to he
 lp you start experimenting with koji in your own kitchen.\n\n\n\nThe event
